Made in methode traditionelle. Lovely purity of white stone fruit, citrus blossom and lemon oil. Driving the palate are the beautiful creamy mousse and fresh chalky acid line.

Tasting Notes
Pale straw lemon. |
|
Green apple skin, jasmine, oyster shell and subtle, freshly leavened dough. |
|
Crisp and pure, beautifully taut yellow citrus and green apple combine with oyster shell salinity and delicate white florals. The palate finishes long and fruitful with hints of freshly baked ANZAC biscuits. |

56/44% chardonnay/pinot noir. Four years on lees, 3.9g/L dosage. A bright green gold. Richly fruited with aromas of poached apples, brioche, lemon confit and a little honey. Full flavoured on the palate with plenty of backbone and drive. It's just about ready now, and my advice is to drink this over the next couple of years.
