The 2016 Yering Station Reserve Cabernet is a blend of two vineyards from the Gruyere and Yarra Glen regions of the Yarra Valley. They were both treated similarly in the winery and blended together, post maturation. 2016 was perfectly suited for Cabernet Sauvignon, full of flavour with very fine tannins and length as the summer long.

Presented in a beautiful gift box this is a wine that will make an impression.

Our aim with our Reserves is always to craft exceptional wines in the most exceptional years. The 2016 vintage was unique and extremely challenging. As a result, we had to make the hard call not to release a Reserve Chardonnay or Pinot Noir, and only a very limited production of Reserve Shiraz and Cabernet Sauvignon.

A warmer than average Spring meant flowering and early vine growth took place simultaneously for most varieties. We had to wait for ripeness, resulting in full flavour occurring at slightly higher sugar levels. A great Cabernet year with a warmer finish to the season.

Picked at full ripeness the berries were gently destemmed and fermented to dryness for 10 days. An additional 30 days on skins post-ferment gives the wine a firmness whilst retaining its silky finish.

Tasting Notes

Colour
Japanese carmine.
Nose
Blackcurrant and cassis bud, overlayed with subtle cedar and cinnamon spice.
Palate
Power and beauty. The intense blackcurrant fruit coupled with vanillin oak spices provide richness and complexity. Fine grain tannins with a long persistent finish are hallmarks of our Reserve Cabernet.

Ranked: #2 of 19 2016 Cabernet Sauvignon from Victoria An exquisite wine with amazing harmony and composure. Incredible fruit purity with intense red rose nuances and a melange of berry fruit. The oak provides seamless support, and the tannins are fine and integrated. An expertly made wine using fruit of the highest quality. I expect it will age beautifully.

Review
Medium to full red/purple colour, with a bouquet that reminds of almonds and even marzipan. The wine is lean and of medium intensity. It has little cabernet character and seems a tad underdone. Perhaps it needs air - or cellar time. A puzzling wine under this esteemed label. PS: two days later, it had blossomed into a very pleasing wine. Intense, well-balanced and structured, very elegant, loaded with blue and red fruit flavours, violets and spices, the finish refreshing, mouth-watering and long. A transformation! It just demands patience.

This took a lot of time to open up and show its true merit, eventually emerging with abundant blue and red fruit aromas, violets and spices, the finish and aftertaste very long and refreshingly elegant. Decanting and aeration is recommended.
