“A collaborative effort between the Yering Station winemaking team and Champagne Devaux, comprised of 56% Chardonnay and 44% pinot noir and made in the traditional fashion, this was aged for 5 years on lees without mlf. The dosage is in check at 5g/l, the texture ample and creamy, with plenty of toast, iodine and baked apple notes lending credence to a salubrious bready style. Plenty of colour already, yet impressive in its weight, vitality and detail.”
